this week I’ve been crushing on a few IG accounts for recipes, workouts, and lifestyle inspro lately and I’m all about sharing so if you’re not already following @theellenshow (I mean it’s Ellen Degenerous people, we all need a little more positivity in our feeds and she is an EXCELLENT source) @susiedrinks (all things boozy in the DFW metroplex. I am creating my cycle playlists for my Tuesday, Wednesday and Thursday classes for the month of May. I love batching this task because it (a) makes me excited that I’m prepared and (b) gets me pumped to teach the class when it’s a kickass super intentional playlist. Lubbock, TX
So I went on a work trip this past week to headquarters located in Lubbock, Texas. These trips are pretty short and sweet so I make the most of them with trying a new place, ‘The Funky Door’. Really cool place (with tons of wine of course), so check out my Yelp review! If I can’t find something healthy-ish or what I’m in the mood for I buy from our store and lemme tell you, before this job I wouldn’t normally buy food from the food service area or cold-prepared section but knowing what I know now with our stores I look forward to the days when I “forget” lunch or didn’t make enough the night prior to have leftovers or am on a trip. It’s budget friendly and delicious.

we just had a charcuterie night the Friday I came back and lemme tell youuuuuu them bottles be poppin! And when they aren’t poppin we use our Coravin. This (expensive) little tool is well worth the investment if you love wine. It allows you to puncture the cork without popping the bottle and having it go rancid if you didn’t drink it all. It makes an awesome gift for the wine lover in your family or circle of friends.

I didn’t do much cooking this week since I was gone for about half of it. So something that I’ve been loving up on is pancetta. Now the key is to find you a good quality one…(yes, it’s my inner Ina Garden coming out) like Boars Head or Columbus. I have the deli slice up one 1/4 inch thick piece and I cube it up for salads, appetizers, or to throw in a dish for the fat to be rendered out (and saved).
5. Lift People Up
It may sound cliche but be the change you want to see in the world. Put out the vibes into the universe that you want to see and ultimately it will make it’s way back to you. So take sometime in your day to lift others up. Be as simple or creative in your methods, but do it, it feels good I promise.
6. Family time
have you ever gone to a family reunion? Well I go to one every year in a tiny town called Muenster, TX and it’s called German Fest. This is where my Grandmother’s family on my mom’s side grew up. Long story short, my mom has 51 first cousins…YEAH…so every year we all meet up, play games, dance, get sunburned, drink a healthy amount of beer, and eat way too much strudel/bratwurst/sauerkraut/turkey legs/kettle corn/you get the point. It’s always a good time no matter the day. I love this crazy family of mine!
