Working in the grocery world things rarely happen in real time. That being said when this milk alternative crossed my desk back in July it was like Christmas in a cup. This is why I love food! It has the power not only of nourishing our bodies, but our souls. Food is meant to be enjoyed and these food heavy holidays pop up every month, so stay cognizant of how food (and the people around you) makes you feel and mindful of what else is going on. 

If you’re looking to make this recipe even more trendy, I’ve also recipe tested:

  • adding a scoop of collagen (YAY little bit of extra protein if that’s your thing!)
  • adding a package of Four Sigmatic mushroom elixir (YAY adaptogens!)
  • 1/2 c. pistachio milk + 1/2 c. 1% Fairlife milk (YAY more protein and creaminess!)

Whichever way you end up making this bevvyyy, enjoy my friends!

INGREDIENTS

  • 1 cup three threes pistachio milk
  • 2 Tbsp Godiva Dark Chocolate Hot Chocolate Mix
  • Additional topping: marshmallows, Cabot whipped cream, chopped Wonderful shelled pistachios, chopped soft peppermint candies

DIRECTIONS

  1. Pour milk alternative into cup
  2. Heat in microwave for 1 minute and 45 seconds
  3. Put hot chocolate mix in and mix with milk frother (sooooo necessary for that special touch)
  4. Top with additional toppings as desired (if nothing else, the whipped cream and crushed pistachios really do make all the difference)

Peaches and tomatoes are in peak season here is TX and so are events. Be it a family cookout, work BBQ event, potluck, bridal shower, baby shower, brunch, or a random weeknight, this quick and nutritious side dish is the perfect seasonal dish to grace your table!

INGREDIENTS

  • 2 cups basil
  • 2, 8oz pkg mozzarella pearls
  • 2 lbs multi-colored tomatoes
  • 6 peaches
  • Salt & Pepper to taste

DIRECTIONS

  1. Pit and dice peaches
  2. Slice tomatoes in half
  3. Chiffonade basil
  4. Break apart mozzarella pearls and combine in bowl with salt and pepper
Serves 6-8

HAPPY EASTER my little carrot and chocolate loving bunnies (aka. the intuitive eater you)! I am really loving writing these weekend roundups because I get to share inspiration, other people, places, products and it allows me to share a little bit about myself other than all the food content I post!

this week I’ve been crushing on a few IG accounts for recipes, workouts, and lifestyle inspro lately and I’m all about sharing so if you’re not already following @nourishnflourish (intuitive eating for dayysssss! And she’s hosting a 10-week workshop so get in while you can!) @graciemeringer (she is a relationship coach all about that self-care and self-love) @foodfitnessandfaith (so spunky and her feed makes me fall in love with vegetables everytime time) and @antoine_howard (talk about drive and purpose – if you pick up only 10% of what he’s throwing down you’ll be 100% driven to be a better version of yourself). Now go stalk their feeds!

finishing up a craft project for my mother-in-law. I can’t even tell you how many projects I have on my plate outside of this blog but I write them down in my planner (with action steps of course) so I can get them off my mind and enjoy this glorious 4-day weekend situation I’ve been blessed with. If you have not tried this method I HIGHLY recommend it. 

WAITING ON…

my summer vacation. Keep in mind my vacation is a little less than 2 months away but I’ve already started sifting through my closet picking out outfits, with accessories of course, and trying to find 1-2 swimsuits online (because heaven forbid if I wear the same swimsuit twice). So until then I will keep looking back on last year’s vacation photos to give me all the feels.

the past 2 weekends we’ve gone somewhere in Legacy West. If you haven’t been to this area yet, get there soon! Its vibrant and fun with so many delicious restaurants, beautiful shopping, and overall vibrant culture. My top 3 restaurants at the moment are: Haywire, Earls and North Italia (honorable mention to TruFood Kitchen). Still on my list of places to go is Bulla Gastro Bar (I just don’t know if I can bring myself to pay $40 for paella though eeekkkk)….but I’ll keep you posted

a-a-a-a-ah-alcohol…

annnnnnnd the Texas storms are here. If you don’t live here I suggest not visiting in April, only because the weather could be 95 one day and then 60 the next with grapefruit sized hail *eyeroll*. So my alcohol intake has been everything from Gin and Waterloo to Australian Shiraz. A brand that I’ve been crushing on lately is Molly Dooker because they do it soooo well.

I shared my quick and easy enchilada sauce on the gram a few days ago and I guess I’ll share it on here too because it’s like Frank’s, “I put that shi*t on everything”. Ready? 1 can of rotel, 2-4 chipotles in adobo, blend it in a nutribullet and you’re done! #yourewelcome If you try it, use the hashtag #TaylorYourTable because I would love to see your creations.

5. LEG DAY!

gainnnnnns for days! I mentioned I want to start mixing up my workouts yet again. I had knee surgery back in September and have slowly been building up strength and stamina and I finally feel I’m at the point where I can lift heavy and with the right motivation and modifications I’m all sorts of pumped to cross-train a little better. 6. INSPIRATIONAL QUOTES

I have practiced this for sometime now where I scroll through social media for about 20 minutes to find a quote that resonates with me. I use it to fuel my week ahead by setting it as the intention. I look at it everyday as a reminder to refocus if I start veering off.

I LOVE CHARCUTERIE BOARDS (*insert clapping emoji hands here*)…I mean just go look at my Instagram! It really surprises me that this is not more of a “thing” in the American culture.

One of the most magical things about these boards and get-togethers is that people leave feeling content. They didn’t over eat or drink, or under eat, but rather just enough. So why is that? It could be a few things like maybe, they are savoring every bite they create, socialize between bites, not feeling the need to finish all of the food on the board by themselves, take small servings of each item and feel comfortable coming back for more, and that’s scratching the surface.


So let’s get to the fun part then, how do we create a delicious, instagram-worthy board?! First let’s start with how many people this is feeding, as well as if this is the appetizer or the main entree. My boards are typically made for 2 or 6 people and are the main entree. The “formula” is generally the same, the amounts just change. So here are a few tips and tricks I use when creating my boards:

Cheese: choose 2-6. You can use your deli or if they have a specialty area you can ask if they will cut a specific size so help control cost (cuz loooooooorrrrddddddd knows it’s expensive for the good stuff). Pro Tip: I ALWAYS get a goat cheese because it can go sweet or savory

Meat: choose 1-4. Use your deli to cut you slices. I ask them to cut 1/4 to 1/2 pound per. Step out of the box – it doesn’t have to be just pancetta, pepperoni, salami, etc, dabble into the chicken, ham or turkey or something.

Fruit: I feel this is pretty self explanatory. Choose color and variety. What we as dietitians say alllllll the time, “eat a rainbow”. I generally pick 3-6 

Vegetable: the more the merrier! Majority of them go with a greek yogurt, avocado, ranch, or hummus situation

Grains: versatile cracker, fun cracker, bread

Extras: 2 types of chocolate, a jam, mustard, hummus, olives, popcorn, candy, nuts – really this could be anything to fill the gaps. 

Extra tips: 

  • there is no right and wrong way to create and if anyone tells you otherwise, reevaluate your friendship (hahaha jk, buutttttt….)
  • choose pre-cut/pre-washed items where desired to cut down on prep time
  • use this as a time to “clean out the extras” from the fridge. Do you have anything you can repurpose to reduce food waste from your week?
  • choose foods you will actually eat, but don’t be afraid to try something new
  • think in terms of themes. Is there a specific event or holiday you’re wanting to building this around? (ex: brunch, July 4 colors, cinco de mayo, saint patricks day) – get creative!
  • what are your “big ticket” items? What do you want your guest’s eyes to be pulled to first? 
  • when designing your board think in terms of putting opposite colors near each other
  • also think what goes well together (ex: strawberries and chocolate hummus; carrots and ranch; mustard and salami)
